These are good with some tea, or iced tea, since it’s summer, although it seems it keeps getting rainier and rainier. These magical little squares are not too sweet and go well with fruits. An old friend of mine would always make these and we would all eat them up. I always make them once in a while. I snuck up on my sister who was eating them out of the container LOL, but I have to admit that I do the same thing! Hopefully you like them too! 🙂
For the bottom, grainy, dark part of the lemon bars, you need the following:
1/2 cup of butter
1 cup flour
1/4 cup powdered sugar
First, preheat the oven to 350 F.
Then, you have to melt the butter (usually one stick of butter equals 1/2 cup). I melted mine in the oven, but you’re welcome to melt yours in the microwave, or even in a pan on the stovetop.
Add the butter to the flour and powdered sugar and cream with an electric mixer. Put aside the mixer as you will need it later on.
Press this mixture into the bottom of a 9 x 9 inch pan. You can also use a 7 1/2 x 11 1/2 inch pan. The smaller pan just means the bars will be thicker.
Bake this in the oven for about 20 minutes or less, depending on the oven (it’s happened to me that it got a little burnt).
For the filling you need:
2 eggs
1 cup sugar
3 tablespoons lemon juice (or the juice of one lemon)
Grated rind of one lemon
1/4 teaspoon salt
2 tablespoons flour
Also, you need powdered sugar to sprinkle over the bars once they’re done baking.
Beat the eggs with the electric mixer, add the sugar, lemon juice, salt, and lemon rind. Add the flour.
This is what the bottom of the lemon bars look like after being in the oven.
Spread this above filling in the pan and bake for an additional 25 minutes (still in the 350 F oven).
After they’re done baking, take them out of the oven and use a sifter (pictured above) to sprinkle heavily with powdered sugar all over the mixture.
Cut into squares.
Dig in!
